Thank you so much for watching this Aldi meal prep! Today I am sharing with you a $50 budget Aldi grocery haul and meal prep. I really loved getting my groceries delivered with Instacart!
1 lb breakfast sausage
8 flour tortillas
1/4 cup milk
salt and pepper
2 cups shredded cheese
1/2 cup salsa
Saute sausage until cooked, drain on paper towels. Mix eggs with milk and salt/pepper to taste. Cook scrambled eggs in skillet until done. Add sausage and cheese, if desired. Roll filling into tortillas topping with salsa. Wrap in parchment paper. To heat, warm in microwave for 45-60 seconds. If not used within 5 days, freeze.
1.5 lbs chicken breast, cut into 1″ cubes
1/2 onion, chopped
Salt, pepper and garlic powder
1 green pepper chopped
1 cup frozen peas
1 potato, peeled, cubed and boiled until soft
1 jar red curry sauce (also can use tikka masala sauce from Aldi)
1 can coconut milk
1-2T curry powder
Season chicken with salt/pepper/garlic powder, and saute that with onion in olive oil until cooked through. Add green pepp
