Hey! This Chicken Broccoli Noodle dish is ready in just 5 minutes and is a mid week staple in my world!

Serves: 2 (or 1 VERY big appetite)
1 tbsp oil
1 chicken breast, diced
100g broccoli, diced (about 1/4 regular sized broccoli)
1 pack of ‘straight to wok’ noodles (I’m using carb free Konjac noodles)
1 tbsp soy sauce
2 garlic cloves
1 inch fresh ginger, grated
1/2 mild red chilli
2 tsp toasted sesame oil
1 tbsp sesame seeds (optional, but pretty!)
2 spring onion, chopped (optional, but pretty!)
Preheat the pan, then add in the oil to heat through.
Lay the chicken out in an even layer and let sit for 2 minutes to get a nice golden colour underneath.
Flip over, then add the broccoli. Turn up the heat a little and stir fry until the broccoli is cooked to you liking. If you like it soft, add in a splash of water to help it steam.
Next throw in the noodles, garlic, ginger and chilli and stir fry for 1 more minute.
Turn the heat off add the toasted sesame oil and toss well to spread the flavour round.
Plate up the chicken broccoli noodles, and sprinkle with the sesame seeds & spring onion.
