This is what we’ve been eating this week, the majority of it is completely syn-free and full of speed foods so the meals are perfect for anyone following Slimming World or just looking to add more vegetables into their diet. I’ll link the recipes I followed below, some recipes aren’t from Slimming World but if a recipe asks for oil I just use fry light and if it asks for red wine or something you have to sin, I just leave it out or substitute it for something else so it makes it a free food. I hope that makes sense.
Meal 1 – Tomato Cod with Dauphinoise Potatoes and Greens
Cod recipe –
*I didn’t add the brown sugar or use any oil
Potato recipe – Slice potatoes and layer in an overproof dish, fill with vegetable stock about halfway up the potatoes, cover with foil and bake in the oven for 1 hour at 180-200 degrees celsius, then remove from the oven, sprinkle with cheese – using HexA allowance – syn cheese if not using allowance, and then return to the oven until golden brown and bubbling.
Meal 2 – Sausages and Mashed Potato
Sausage stew recipe –
*I used Heck Chicken Italia sausages for this and they are around 0.5-1syn per sausage. I also left out the red wine, added tinned tomatoes and left out any oil. I used tinned green lentils, added some Worcester sauce and it turned out really nice.
Meal 3 – Slimming World Bolognese
Bolognese recipe –
*I couldn’t access the SW website so this is another recipe I love, just leave out any sugar, wine, oil etc.
Meal 4 – Cod Stir Fry with Gyoza
Stir Fry Recipe –
*I used the stir fry recipe from this, but added baked cod instead
Cod Recipe – Baked with soy sauce, garlic, oyster sauce and rice wine vinegar
Itsu Vegetable Gyoza is bought from Tesco and works out at about 1 syn per gyoza, lovely for a Friday night fakeaway.
Meal 5 – Chicken Curry
Curry recipe –
*I used shredded chicken leftover from a roast instead of raw chicken, make up the sauce as normal then just add the cooked chicken close to the end. I also added LOADS of speed foods to bump up the veggies
