HOW TO MAKE CHUNKY VEGETABLE SOUP| RECIPE | Gemma’s Vegetarian Recipes
This vegetable soup is simple and quick to make, it’s both tasty and good for you. Packed with Broccoli, celery, carrots, leeks, Cabbage and beans, it’s a great way to get more vegetables in your diet. Prep all the vegetables first and then you just have to add them to the pan.

1 onion, diced
2 garlic clove, crushed
500g mixed root vegetables diced (Swede, Carrots, Celery)
100g chestnut mushroom, sliced
400g tin of Borlotti Beans
800ml vegetable stock
300g Mixed vegetables (Broccoli, Leek, Savoy Cabbage)
Salt & Pepper
1. Start by melting the butter in a pan, then add the onions, and cook for 5 minutes on a low heat until soft.
2. Add the garlic and cook for a further minute.
3. Add the swede, carrots, celery, Stock and passata. Bring to the boil then reduce the heat and simmer, covered, for 15 mins or until the vegetables are tender.
4. Add the Borlotti Beans, Leeks, Broccoli and Cabbage for 5 minutes or until tender. Season to taste and serve
