How to make German Christmas Cookies "Spitzbuben" (Monika’s International Cooking)

Spitzbuben are German Christmas Cookies that are filled with jam. You can find these cookies troughout Germany and Europe around christmas time at christmas markets and traditional homes. My mom used to store christmas cookies in the attic, because it was a lot cooler than in our appartment. I reccomand when you put the cookies in a cookie box to store them in a cool area or on tile floor so they can last longer. The longer they stand the better they get. I usually start eating them a week after i make them because the flavior is much better. Enjoy these Spitzbuben!!!
Spitzbuben:
4 cups of unbleached flour
2 1/2 cups of powdered sugar
2 Tbsp of vanilla sugar or 1 1/2 Tbsp of vanilla extract
4 egg yolks
3 1/2 – 4 sticks of butter, only if dough is to dry and not smooth
2 Tbsp of lemon zest
Blackberry jam or Strawberry jam
Extra powdered sugar
