How to make The Best Mexican Birria Consome and Tacos| Chicken  Recipe

Birria! Chicken Birria Consome (broth) and Tacos. This recipe is equally as delicious as goat or beef Birria. Changing the protein should not keep us all from enjoying this delicious dish. I hope you enjoy my take on Birria.

Cook time 1 Hour
For extra flavorful broth and tender, all of the bone chicken cook 1 hr 20 minutes
The more chicken with bones the more the flavor in your broth.

Ingredients
5- Pounds of Chicken (I used 3 Breast with bone and 3 Drumsticks)
1/2- Large Onion or 1 Medium
8 to 10- Carrots
1 Potato
9-10 Medium Bay Leave
10- Guajillo Chiles (No seeds)
3-Tablespoons Chicken Bouillon
1/2-Teaspoon Ground Coarse Salt
10-Ground Peppercorns or 1/4 Teaspoon Pepper
Pinch of Ground Clove
Water will vary from the amount of chicken used and size of the pot (I used 2 1/2 Litters of water)

*To keep the Birria mild in spice don’t add peppercorn or clove
*Please adjust salt and bouillon to taste. Wait for a full boil before you begin adjusting flavors. At about 45 Minutes check and begin by adding 1/2 Tablespoon of chicken bouillon at a time. Boil for 10 minutes and taste. Continue this process until you achieve the saltiness and flavor that makes you smile.

Optional toppings: Chopped onions, cilantro, finely chopped Cabbage, and lime/lemon

Views Birria Chili Oil
Grind all the dry spices in your grinder of choice:
4-Guajillo Chiles + 1 extra for infusing
2-Bay leaves
1/2- Tablespoon Oregano
1/2-Tablespoon Chicken Bouillon
1/2-Teaspoon Pepper Corn or 1/2-Teaspoon Black Pepper
1/4- Teaspoon Ground Clove or 2-Cloves
1/2-Teaspoon Granulated Garlic Powder
1/4-Teaspoon Sugar
1-Cup Canola or Vegetable Oil

For Spicy oil add
10- Chiltepines or 1/2- Teaspoon Cayenne Pepper
4-Puya Chiles
