Instant Chicken Biryani In Pressure Cooker/Without Curd || चिकन बिरयानी || Mohini's Meal Hub

INGREDIENTS :—

1. chicken 500 grams { washed }

2. 300 grams basanti rice { or any rice }

3. 2 large onion sliced

4. some whole spices:-

4 green cardamom, 1 cinnamon stick , 2 bay leaves, 1 star anies, 1 black cardamom , 1 mace , 4 cloves ,10 to 12 black pepper , 1/2 tsp saah zeera

5. 2 large onion sliced and fried

6. kewda water — 2 tsp

7. regular cooking oil

8. 1/2 small tsp cumin powder

9. 1 tsp red chilli powder { kashmiri mirch}

10. 1/2 small tsp chicken masala powder

11. 1/2 small tsp sahi biryani masala powder

12. chopped fresh coriander

13. 1/2 small tsp coriander powder

14. 1/2 small tsp turmeric powder

15. salt to taste

16. 2 inch ginger, 6 to7 garlic cloves , 4 to 5 green chilli { paste }

17. 1 boiled egg { for garnishing }

18. 6 to 7 garlic cloves

19. 1 tsp desi ghee { clarified butter }

20. food colour { red and yellow }

METHOD :—

1. Turn on the flame and add 4 to 5 tsp oil into pressure cooker and let them heat properly.

2. Now oil has been hot turn the flame low and add the whole spices and fry them for 1 minute until it releases it’s flavours.

3. Add sliced onion and turn the flame medium low and let them fry until it turns light golden.

4. Add ginger, garlic,green chilli { paste } and garlic cloves fry them on medium low flame for 2 to 3 minutes until ginger and garlic raw smell disappears.

5. Now add all the powdered spices so turn the flame low and add salt to taste, kashmir red chilli powder,cumin powder, sahi biryani masala powder, chicken masala powder, coriander powder, turmeric powder,.. add little water to mix well cover it and fry them on low flame for 5 to7 minutes until masala releases oil ..and stir it occasionally.

6. Add 3 to 4 cups of water in pot turn on the flame and let them boil on high flame .

7. Now water has been boiled on high flame turn the flame medium and add 1small tsp desi ghee and salt 1/2 small tsp mix it well and add washed bashmati rice and cook them on medium flame about 75% not more then 75%.

8. Now the masala has been fried well as you can see now add chicken and mix it well into masala . now turn the flame medium low and fry them for 8 to 10 minutes without cover and stir it occasionally.

9. Now the rice has been cooked 75% turn off the flame and strain the rice. now leave them for 2 to 3 minutes until excess water drain.

10 . Chicken has been fried well into masala.
now turn the flame low and now the layering process begins :—–

* spread the boiled rice equally all over the chicken.

* add food colour one side yellow and one side red .

* add desi ghee .

* spread fried onion all over.

* spread chopped fresh green coriander.

* add 2 tsp kewda water .

* add 1 small bowl water so that chicken could not burn from bottom.

11. Now cover ti with pressur cooker lid and bring 1 whistle on low flame . not more then 1 whistle otherwise chicken and rice will get overcooked.

12. 1 whistle is over turn off the flame and take out the whistle and wait until it’s pressur cool downs .

13. Now remove the lid and check the biryani mix it with fork with light hand so that rice steam comes out .

14. Don’t mix it whole biryani .now take it out in a plate from corner as shown in video and garnish it with fried egg and chopped coriander .

15. Instant chicken biryani in pressure cooker is ready .
