Hello my fit family, here I have two Mexican rice recipes, one the classic and very typical mexican red rice, and the other is a very, very tasty green poblano rice 😋 if the amount I made with a whole cauliflower is a lot for you , feel free to cut the recipe in half to make less😘 and now you can enjoy two different types of mexican rice😀🍚🍚

Ingredients for Mexican Red Rice:

1 frozen cauliflower rice bag / 3 cups of cauliflower rice

2 tbsp avocado oil or olive oil

2 tbsp chopped onion

1 chopped garlic

2 tbsp tomato paste

1/2 tsp garlic powder

1/3 cup chicken stock / water

1/2 cup chopped green beans

Sea salt / pink hymalaya to taste

2 poblano peppers, (one will be roasted and peeled)
