The recipe: (for 1 bubble tea drink)
– 2 tbsp tapioca starch
– 2 tbsp water
– another 4 tbsp tapioca starch
– food coloring (optional)
– 3 tbsp brown sugar
– 0.5 tsp vanilla extract
– 0/5 cup water
– black tea (you can sutitude with coffee, green tea, or fruit juice)
– milk (soy milk is my favorite, use any milk you like)
– sugar water

Mix well in a small pot 2 tbsp tapioca starch and 2 tbsp water and put it on the stove on low heat. mix it while cookin until its becoming one lump. remove from the stove and put it on a clean working surface.

Add to it 1 tbsp tapioca starch each time, and kneed it until its absorving the strach. keep adding tapioca starch until the dough no longer sticky and its easy to work with.

Now you can add some food coloring to your choise or move on tot the next step.

make a 1 cm thick log (***even a bit smaller than 1 cm), add tapioca starch to it, and cut it to small pieces. then start to make little balls from it. Cover the tapioca while making the balls so it will not dry out.
Meanwhile boil some water in the pot.

Add all the balls to the boiling water and mix gently. Cook it for 5 minutes on high heat.
5 minutes later, strain the pearls from the water and cool it down with very cold water (you can also put them in a bowl with ice water).

Now add the sugar, vanilla extract and water to a pot. add the bubbles and cook it on a few minutes until the sugar melts. Then torn off the heat and let the bubbles sit in the syrup for 30 minutes to 1 hour.

Put the bubbes in a glass, add some ice, your cold tea and milk. and ENJOY! 🙂

*** If you dont have big straws, make the balls smaller ***
