Mutton Biryani In Slow Cooker~ How To Cook Mutton BIiryani In Slow Cooker~ স্লো কুকারে মটন বিরিয়ানি

LykaLikes presents mutton biryani in the slow cooker. It`s a simple recipe to follow & very suitable for working persons or students who cook on their own.

Mutton: 500 gm
Basmati rice i: 750 gm washed and soaked in water for 10- 15 minutes
Potato: 6 nos
Egg : 3 nos
Yogurt: 1 &1/2 Tbsp
Lemon: 1 Tbsp
Coriander leaves: 2 cups
Ginger & garlic paste: 2 tbsp
Garam masala powder: 1 Tbsp
Black pepper powder: 1 Tbsp
Corn flour: 1 & 1/2 Tbsp
Milk: 1/4 cup
Saffron: 1 Tsp
Rosewater: 2 Tbsp
Kewra water: 2-3 Tbsp
Mace: 1/4″
Cinamon: 1″- 2-3 nos
Nutmeg powder: 1 Tbsp
Star anise: 1 pc
Cloves: 4-6pcs
Black pepper: 8-10 pcs
Small cardamom: 6 nos
Black cardamom: 2-3 pcs
Dry red chilli: 2-3 nos
Red chilli powder: 1/4 Tbsp
Clarified butter 4-5 Tbsp
Green chilli: 8-10 nos
Onion: 6 pcs
Salt to taste
Oil as required
Water: 6 cups

Procedure: ~

Marination of mutton: ~

Lemon juice: 1 Tbsp
Yogurt: 1& 1/2 Tbsp
Salt: 1/2 Tbsp
Ginger & garlic paste : 1 &1/2 Tbsp
Green chilli: 4 nos
Red chilli powder: 1/4 Tbsp
Garam masala powder: 1Tbsp
Nutmeg powder: 1 Tbsp
Black pepper powder: 1 Tbsp
Coriander leaves: 1/4 cup
Clarified butter:2 Tbsp
Oil: 1 Tbsp

Mix the ingredients with mutton & keep aside.

Boil potato & egg. Prick potato & egg with the fork. Fry boiled potato a little.

Fry the onions now. The onions will be fried in two parts.
The part we will add to biryani will be crispy & golden brown in colour. We have taken 4-5 onions, sliced it longitudinally. Deep fry it in oil. Take out the fried onions on the absorbent paper to soak the oil. Fry the rest of the onions separately to put in the slow cooker. It should be brown but need not be crispy.
Fried onions are added in the slow cooker & we spread it uniformly.

Now to prepare the rice: ~
Take 6 cups(1 cup =250 ml) of water in a separate bowl for biryani. (Usually, Rice & water Ratio is: 1:2 but it may vary with rice & water
Put 3-4 cinnamon,1 nutmeg, few small cardamoms 2-3 black cardamom few cloves & microwave it for 10 minutes.
Then strain the water in another bowl & put the masalas in a piece of cloth, tie it to make a bag and place it in the strained water which has been kept in another bowl.
Now heat the water & put the rice in the strained water. 2 Tbsp of salt is added to the water to make the rice a little bit salty.
Now the aroma of the masala will mix in the water. Thus the rice will absorb the aroma of the masala but the whole masala will not be stuck in the mouth.
Rice will be 40% cooked. Then Strain the rice and keep it in a container, covered. Take out the marinated mutton. We will fry the mutton a little, otherwise, it will take a very long time to cook the biryani in the slow cooker. Put 1 Tbsp oil in the pan & fry the mutton for 10 minutes & then cover to cook a little.
When the meat is half done, we will open the cover. Now we will add saffron, mixed with milk. Add 1 tbsp kewra water. Stir & mix the mutton. Now pour the mutton in the slow cooker over the onion previously spread in it. Now put one layer of rice over it. Put the fried boiled potato over it. Spread coriander leaves over the rice. Add1/2 Tbsp garam masala powder, 1/2 Tbsp clarified butter. Spread fried onions over it. Spread saffron, mixed with milk so that rice & potato both will catch slight yellow colour. Now we will add a 2nd layer of rice. Put boiled eggs over the rice. Spread garam masala powder, clarified butter. Add a generous amount of clarified butter to make the biryani tasty. Add chopped coriander leaves in a large amount. The coriander leaves will make the rice beautifully flavoured. Add 1 Tsp kewra water, 2 Tsp rose water. Spread fried onions over it. Sprinkle the saffron milk over it.
Cover the slow cooker and the biryani will be cooked in steam. When you will open the lid you will find a splendid flavoured colourful biryani. The time taken to cook this biryani in the slow cooker is 3 hrs. but the time may vary with rice quality.
The advantage of cooking in the slow cooker is that you put the food to be cooked in the cooker & keep it in auto mode & then forget about it. Finish all your work. The cooker will automatically be switched off when the food is ready & will keep the food hot for a long hour. You will open the lid & use the food when you want & will get the food hot.
