In this video, I go through the steps of making a delicious slow cooker chicken and bacon casserole. It’s a hearty meal that will feed quite a few people.
I love this casserole as the sauce is incredibly creamy. The chicken and vegetables will cook to be tender and help add a ton of different flavors to the sauce.
The casserole is great on its own and doesn’t need any extras to go with it.
You can feed up to eight people with a single batch of this casserole. If you want to feed more, then I highly recommend making some side dishes to go with it. Something as simple as green vegetables go great with the dish.
If you somehow end up with leftovers, then make sure you keep them for the next day. They make for an excellent lunch or dinner.
A list of all the ingredients that you will need for this tasty recipe is right below.
• 1kg (2.2 lb) chicken thighs, cubed
• 200g (7 oz) crispy bacon, diced
• 200g (7 oz) mushrooms
• 1 onion, diced
• 1 tsp garlic, crushed
• 2 large potatoes, cut into chunks
• 2 carrots, cut into chunks
• 1 tsp thyme
• 1 Tbsp tomato paste
• 250ml (8.5 fl oz) chicken stock
• 250ml (8.5 fl oz) heavy cream
• 2 Tbsp. cornstarch
• 3 Tbsp. Water
There are a few adjustments that you can make to the recipe. For example, you can leave the potatoes out of the dish but it won’t feed as many people.
Also, feel free to use any cut of chicken, I find chicken thigh to be the best, but others such as breast will also work.
