2 pounds beef chuck or tri-tip
1 tsp. cumin
1 tsp. salt
1/2 shredded cabbage
2 sliced onions
1 Tbs. oil
1 tsp. Thyme
2 tsp. salt
1/2 tsp. pepper
2 tsp. Worcestershire Sauce
Boil the beef with the spices until you’re able to shred it, this should take about one hour or could be done the night before.
Saute the onions in a large saute pan and add all of the shredded beef to the pan. Season it with the salt, pepper, Worcestershire and thyme. Fry it for about a minute then add the cabbage and cilantro.
Once the cabbage is wilted place the mixture to the side.
Warm up the tortillas in the microwave until you’re able to bend them without them breaking.
Fill the tortilla with the beef mixture then fold them into tacos and place all of the assembled tacos on a plate.
Heat up the saute pan and place about 3 tablespoons on oil to the pan. Add the tacos and fry them until they are golden brown on both sides.
Serve them with a salsa. To Make the salsa simply boil 2 tomatoes in a small pot with a half of an onion and some water.
Once the tomatoes are soft after about 5 minutes, drain most of the water and blend the mixture with a teaspoon of salt.
Fry the salsa back up in 1 tsp. of oil and allow it to simmer for 3-5 minutes until its rich and vibrant red color.
