Hi friends~
Today I’m sharing the perfect recipe for the winter – steamed buns!
I find this food very comforting and its so warm and fun to eat o winter time.

Lets start!

The recipe (for 8 buns)
For the dough:
– 3 cups flour (2 cups white flour + 1 cup whole weat flour)
– 1 tsp yeast
– 2 tsp sugar
– 1 tsp salt
– 2 tbsp olive oil
– 1 cup water
Combain all the ingredients in a bowl and mix with a spoon until the flour absorving all the liquids. then start kneed it with your hands for 2 minutes. let the dough rest 5 minutes and keep kneed it for 10 minutes. cover with some oil, cover it and let it rise for about 2 hours.

The filling:
– 1/3 cup well fermented began kimchi (my recipe:
– small onion chopped
– 50 grams firm tofu scrambled
– 3 tbsp olive oil
in a heavy pan fry the kimchi for 5 minutes and then add the onion and the tofu and fry it for another 1-2 minutes. remove from the stove and set aside to cool down.

– 3 shiitake mushrooms soaked in water for at least 1 hour
– 1 cup “beef” soy chunks (buy it here:
soak it in water according to the package
– 3 spring onions
– 2 garlic gloves
chopped the spring onion, garlic and shiitake mushrooms. the soy chunks you need to chop roughly.
add it to the already cooled down kimchi-onion mixture.

seasoning:
– 1/2 tbsp gochujang (my recipe:
– 1/2 tsp soy sauce
– 2 tsp sesame oil
– 3 tbsp corn starch

mix everything together and set aside until the dough is ready.

When the dough is double in size, take the air out of it, and cup it to 8 even pieces. Make a bowl from each piece and cover all the dough balls so it will not dry out.
Flatten each piece to a little less than 1 cm thick, you need to flatten the edges a little more.
Add 1 big tbsp of the filling and put in the middle of the dough, close it well, and put it on a little parchment paper and place it in the steamer basket.
Let the buns rise for another 20 minutes.
Boil water in a pot and when it’s boiling put the steamer basket above and steam the buns for 25 minutes.
25 minutes later you need to turn off the stove but DO NOT OPEN THE LID YET. Wait for another 10 minutes and then it’s done 🙂

Enjoy
