Ingredients:
Thai Pav Bhaji:
• 4 Potatoes
• 1 cup Peas
• 1 cup Cauliflower
• 2 Onion
• 2 Tomatoes
• 1 Capsicum
• 5 tbsp Thai Pav Bhaji Paste
• 3 tbsp Pav Bhaji Masala
• 1/4 cup Coconut Milk
• Water As Required
• 2-3 Brown Soft Pav
• 4 tbsp Butter
• Spring Onions

Pav Bhaji Thai Paste:
• 1 Onion
• 1 Whole Garlic Clove
• 5-6 Dry Red Chillies
• 2 tbsp Galangal
• 3-4 tbsp Lemongrass
• 5 Kaffir Lime Leaf
• 2 Bird’s Eye Chillies
• Water As Required

Basil Lemongrass Cooler:
• 4 tbsp Lemongrass Leaves
• 1/2 cup Water
• 2 tbsp Sugar
• 8 Basil Leaves
• 3 tbsp Lemon Juice
• Chilled Soda
• Ice

Method Of Preparation:
Thai Pav Bhaji
1. Take whole roasted garlic clove, whole roasted onion and dried red chillies.
2. Put some kaffir lime leaves, bird’s eye chillies, galangal, lemongrass and salt to taste in a pan.
3. Dry roast all of them together and then grind them as well in a mixer.
4. Now in a pan, add few spoons of butter, chopped onion and saute till it turns golden brown in colour.
5. Add chopped tomatoes and cook it for some time.
6. Now put chopped capsicum and cook it on high flame.
7. Pour in the thai paste and cook for about 5 minutes.
8. Now take the potatoes, peas and cauliflower mixture which is boiled before and then put that in the pan.
9. Mix it with the other contents in the pan.
10. Put the coconut milk over the top, some pav bhaji masala, salt to taste and lukewarm water. Mix it well.
11. Garnish with melted butter and fresh coriander leaves.
12. Ready to Serve.

Basil Lemongrass Cooler
1. Take a blender and add lemongrass leaves, little sugar, basil leaves, lemon juice, water and blend it all together.
2. Take a small glass and add muddled basil leaves in the first layer that is the base.
3. Add crushed ice as the second layer.
4. Pour in the lemongrass mixture along with chilled soda.
5. Garnish with basil leaves and Serve.
