Chicken Noodle Soup Recipe:
1 small onion 6 cups chicken broth
3 cloves of garlic 2 cups water
2 celery stalks 2-3 cups cooked, cubed chicken
1 tsp oregano 4 large carrots sliced
1 tsp basil 1 can of corn or 2-3 cups frozen corn
salt & pepper to taste. 2 cups of noodles of your choice
Dice and sauté onion, garlic and celery in pot with EVOO. Add chicken broth, water, seasoning, chicken and carrots. Bring to a soft boil and simmer for 20-30 minutes. Add corn and noodles for amount of time it takes the noodles to cook.
We cook our noodles separately because GF noodles tend to get mushy easily. But egg noodles work great cooking right in with the soup! Also, feel free to add any other veggies! I added the green beans this time because I had some leftover from another meal.
